mmm…How to make home made shrimp cocktail sauce

Hi, it’s me Julie, from redheadcandecorate.com.

It’s rare, but on occasion, Redhead’s early.

This happens to be one of those rare occasions because I wanted you to have these recipes in time for New Year’s.

Welcome back to another addition of:

Before you know it, Santa will be back @ the North Pole drying out his red suit,

and we’ll be sweeping up pine needles.

You know what that means.

New Year’s Eve will be in full swing, so time for some “New Year’s Eve Appetizers”.

Shrimp Cocktail is a staple at our house.

Especially on New Year’s Eve.

This easy homemade cocktail sauce is way better than store bought, and so fast.

Shrimp Cocktail Sauce Recipe

Cocktail Sauce

1 cup ketchup

2 tablespoons horseradish

splash Worcestershire  sauce

splash lemon juice

Mix all ingredients together in small bowl and taste it.

If it too strong, add ketchup. If it’s not strong enough, add more horseradish.

While flipping through a Midwest Living Magazine, I came across this recipe for

Sparkling Cranberry Bites.

Sparkling Cranberry Bites

I thought they looked so pretty and sounded scrumptious.

I scanned the recipe and put everything I needed on my grocery list.

I made them soon after, but I substituted the brie with my favorite low fat version of spreadable cheese.

These were so good.

I repeat…these were so good.

Sparkling Cranberry Bites

What you will need:

Your favorite wheat crackers (25-30)

1 cup candied cranberries (*see below)

2 boxes Laughing Cow Light Creamy Swiss Cheese Spread

Simply spread the cheese on the cracker, and top with 3 candied cranberries. Yum.

*To prepare “candied cranberries”:

Wash 1 cup fresh cranberries and drain. In small pot add ½ cup sugar and ½ cup water. Heat over medium heat until sugar is dissolved. Remove from heat and add cranberries. Stir cranberries coating them with the sugar mixture. Remove cranberries with a slotted spoon and set on a plate to cool for 1 hour. Then roll cranberries in additional sugar. These will keep for a couple days outside the fridge. We also enjoyed them by them self.
