All things Pumpkin {Weight watchers muffins}

I just get giddy thinking about it.

All things Pumpkin that is.

I love, love, love, anything pumpkin related.

Today I am sharing a quick recipe that is an old time favorite I had forgotten about.

I thought I would also do a compilation of all things pumpkin Fall related things I have been loving so far this year that I see.

ahhhh….

First the recipe.

This is also a weight watchers recipe. In fact most of these recipes are weight watcher friendly except for the pumpkin spice oreo cake.  Too many points to count that one.

The muffins however, ONLY 2-4  points a muffin people! Depending on the size. I made smaller ones so they were 2 points each.
That means I can eat two for dessert.

I am actually a life time member, and really need to get back to it.

It was the only weight loss plan that truly worked for me.

DIRECTIONS:

Cake mix {yellow cake}

15 oz, can of pumpkin pie filling.

Mix both ingredients in a bowl, NO WATER, NO EGGS.

You will want to add them but trust me, it mixes up nicely.

Bake @ 350 degrees for 20-25 minutes.

Sorta like the pineapple angel food recipe that I shared during the summer.

Two ingredients, BINGO, I can do that!

I almost could not wait for them to come out of the oven.

They are so moist and delicious!

Did I mention 2 points!? { 2 point for 24 muffins, 4 point for 12}

ahhh, so good. I love all things pumpkin.

UPDATE:

 Today I made this same recipe using a chocolate double chip cake and OMG, delish. Probably adds a point, but oh so worth it.

AGAIN NO eggs, no water, just the 15 oz can of pumpkin filling.

      It made 12 total, I just show the 6 in the muffin pan, I had two of those:) Which btw only two muffins left LOL!

    I am SO making those muffins! Been trying to avoid high cholesterol foods, so leaving out the eggs will allow me to eat these (almost) guilt free! I love anything pumpkin, too. That glitter pumpkin is awesome…love a little bling! Pinning, pinning, pinning!

    These muffins are so yummy…I have been making them for a few years now and still love them. Most of the time I add chocolate chips…you might want to try this (guess they do add a few extra calories). I love anything pumpkin and eat it all year long.

    These sound delish and I have a batch of 16 in the oven right now, however when I put the ingredients in the the Weight Watchers recipe builder online it shows that they are 4 pts+ per muffin. How did you come up with 2?

      On spark recipe it says 2 points. http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2454161 I suppose it depends on the cake mix you use.

    The SparkPeople link above says 2 points per muffin but they say it makes 24 servings (24 muffins). This recipe says 12 muffins so they would be 4 points each if you only make 12.

    Deb..Thanks For Sharing The Recipes..My Son Is In His Last Year On High School And Is Training While Doing So To Become A Navy Seal …He Wants It Bad And I Can’t Get Him To Try Any Of The Stuff I Bake..He Only Wants Healthy And Protien..He Spends Everyday Lifting Weights ,Running Several Miles, Strieving To Be A Straight A Student And Getting Ready For Next Year Where He Will Try Out For Specail Ops..Navy Seal…Anyway…When I Bake Which I Love To He Just Looks At Me Like…REALLY !! So I Am Game For Anything You Can Share…He Will Love These…And So Simple..I Can Just Leave Out A FEW Ingredients When Making His And We CAN Still Enjoy Ours !!! Thanks For Sharing :))

    I make the WW pumpkin muffin recipe also but I use spice cake instead, everyone loves it 🙂

    I’m confused about what pumpkin to use!!! In the ingredients you say can of pumpkin, then later on you say can pumpkin filling. Please clarify I would love to make these, but I want to make sure I use the correct pumpkin. Thank you so much for sharing with us.

      Pure Pumpkin on these. I am sure you can use the Pumpkin pie filling too, as I know I have used both in the past and they work. But in the muffins I did pure pumpkin.

    I also use this recipe but instead of yellow cake mix use devils food cake mix and the pumpkin and it’s brownie muffins. They are awesome

    I make mine using spice cake mix, pure pumpkin purée , but I add 1/3 cup of water & 1 tsp of pumpkin pie spice cuz you can never have enough pumpkin flavoring!
