Pasta Poosta

Pasta Poosta Recipe 1

Everyone loves pasta,right?

Well, we are no exception.

I bet my girls would eat pasta every single night and still want more.

I like it because it’s easy.

So what’s “Pasta Poosta” Red?

Pasta Poosta is easy, good for you, fast, and tastes like heaven.

My hubby flips over it. It’s so funny because it’s so darn easy and I usually have the ingredients on hand.

So here we go…are you ready Debbie? I know you don’t like to cook a lot, so this is perfect for you guys.

Pasta Poosta

(serves 2-3)

½ lb. of spaghetti

1 lb. boneless breast frozen chicken chunks (I get mine in a bag)-left over chicken is fine.

½ cup leftover or jarred tomato sauce (I have used V8 juice before)

1 cup chicken broth

olive oil

½ cup reserved pasta water

2 cups or big handful fresh cleaned raw spinach

2 roma tomatoes-chopped with skin on

5 garlic cloves peeled & chopped fine

S & P

parmesan cheese & fresh basil to garnish with

(fresh sliced mushrooms are always optional)

Directions:

Pull out your chicken chunks from the freezer (or full breasts) and boil them in salted water until completely cooked through. Drain and set aside. While chicken is cooking, get out a large skillet. This may surprise you, but I prefer to boil my pasta in a large skillet rather than a pot. It works great for this dish too. Boil your pasta in salted water until al dente. Drain all of the water except approx. ½ cup. That water is liquid gold. Keep pasta and reserved pasta water in skillet. Now add tomato sauce, chicken broth, 2-3 swirls of olive oil, spinach, tomatoes, garlic, cooked chicken (cut it up into chunks if not already). Fold everything together over medium heat until everything is heated to piping hot. Add S & P to taste and test it to make sure it has enough. Place in pasta bowls and garnish with a big basil leaf, or sprinkle dried basil on it. Don’t forget to serve with parmesan, and crusty bread. OO LA LA! Come to me Pasta Poosta!
