How to make chocolate mint brownies

Hello again from On Sutton Place!

I’m happy to be back here to share another dessert and today.  How to make Chocolate Mint Brownies.

I think this one you will love. I found this recipe on an old card in my recipe box.

I honestly don’t remember ever making it but I must have because there are notations on the card about the baking time. It was fun to see the layers come together and after the first bite I knew I would be making this again! One of the ingredients for the middle mint layer was Creme DeMenthe.

I didn’t have any and looked at my grocery store to see if I could easily find some. They didn’t carry it so I figured out a substitution. I don’t want to list an ingredient that is a pain in the neck to get. So…in place of the Creme DeMenthe I used peppermint extract, a little green food coloring and milk. Worked like a charm!

CHOCOLATE MINT BROWNIES

Brownie layer:
1 c. sugar
½ c. butter softened
4 eggs
16 oz. can chocolate syrup
¼ t. salt
1 cup of flour

Mint Layer:
2 c. powdered sugar
½ c. butter softened
1 t. peppermint extract
2-3 drops green food coloring
1 – 2 T. milk

Glaze:
6 T. butter
6 oz. package chocolate chips
Preheat oven to 350 degrees. Prepare 9 x 13 pan with non-stick spray.
Cream butter and sugar.
Add eggs one at a time, mixing well between additions.
Add syrup, salt and flour.
Mix well and pour into prepared pan.
Bake for 30 min.
Cool.
Mix all ingredients for the mint layer and spread onto cooled brownies.
Put 6 T. butter and chocolate chips in a microwave safe bowl.
Cook in microwave on high for 1 min.
Stir well until it is melted and combined. Cool slightly.
Spread over mint layer.
May be refrigerated and served cold.

If you happen to have some Creme DeMenthe hanging around I think it would be really good in the mint layer. The original recipe called for 2 T. Also, if you want the mint layer a darker green, simply add more food coloring.

Bar cookies are great when you are in a hurry and are so easy to transport. Here’s another 5 Layer Cookie Bar made in a pan. 5 layers instead of 3 and super yummy!

    Debbie, Mint Chocolate anything is my weakness. I am drooling just looking at the photos. Is it ok to eat brownies for breakfast? LOL

    Now it’s working!! 🙂 These look amazing! I make a similar one and sometimes we add pink food coloring to the filling and crushed candy canes on top at Christmas time. They look like little presents!

    I’m loving the look of these. My younger daughter is a mint chocolate nut.

    Can’t tell if I should pin from here directly or check to see if she has it on her blog so I’ll do both. It’s my pin board, and if I want to clutter it up with multiple recipes, that’s my own problem. LOL
