Gluten free gourmet peanut butter chocolate chip cookies

Hi there everyone!

Checking in from Buffalo, NY.  Did I mention it is freezing here? No surprise.  No snow though so that’s a good thing.  I have been able to get around back and forth to and from the hospital with no worries with travel.  My Mom is doing much better.

Off the vent for the second time, but this time we clearly see recovery mode.  It will be a process.  Poor little thing is weak and frail and has a lot of work ahead.  Turns out, there’s a little heart troubles we have to look into as well.  We will get her there slow and steady.  At least, her anxiety is gone.  Y’alls prayers truly did work.  I am so thankful, I can’t even begin to tell you how much.Today, I am sharing some delicious gluten free gourmet peanut butter chocolate chip cookies.

Last year sometime I shared my gluten free peanut butter cookies and I know a lot of you tried them and were quite shocked on how delicious they are. And did I mention how easy they are?

One cup of sugar

One cup of Peanut Butter

 One egg, and one teaspoon of Vanilla.

MIX all together at once, and mix it well.

And some chocolate chips for good measure. As many as you desire.

Put one spoon full on an ungreased cookie sheet.

mmmm…they are so delicious.

Bake at 350 degrees for 10-12 minutes.

I know you must be thinking, how in the world did I whip up cookies in midst of all this chaos? I didn’t.

My dearest blogging friend Ann reached out to me and said I would love to make a recipe for you and you share it with your readers.  The love and support I have been given in this community has been amazing. So many have reached out to me and asked if I have needed help or a guest posts.

I took Ann up on it.  I said how about you try my gluten free Peanut butter cookie recipe and add some chocolate chips too them?  I thought how fun, Ann trying one of my recipes!

Well, she had myself, my Mom and my sisters mouths drooling when she sent me the pictures.  My Mom just thought that was the kindest thing for someone to do. In fact, my Mom said those look like they are from a gourmet bakery.  I said, they do, and gourmet must be in the title Mom!  I thank you Ann, and I hope you enjoyed the cookies.

Will be back soon.  I do have some posts in my drafts that I happened to have done.  However, I am trying to space them out.  I don’t want to use them all and then be here longer and have absolutely nothing to share with you in the coming weeks.  I sure miss being creative! Right now I am exactly where I am suppose to be.   Here for my Mom and family.

My husband, my boys, they are all fine.  I also have a great support system back home, and friends bringing over some home cooked meals for my family.  I think, they are going to be a little spoiled by the time I get back.

    What temperature do you cook the cookies and for how long?

    Glad to hear that your mom is better. It is so hard seeing them so frail and weak. Keeping her in my prayers. These look so good and I love how easy they are! Could go for one of those right now as a matter of fact!

    GOSH…I;ve been making Gluten Free Peanut Butter cookies for over 30 years and didn’t even know it. hahhaa…just never put cho chips in mine but ya gotta know I will the next time.

    Hi! I made these cookies and they were crumbly and greasy and couldn’t keep their shape when I scooped them.. =( Was I supposed to mix the ingredients all at one time, or mix the sugar and peanut butter together first then add everything? Thank you!

      One cup of PB, One cup of Sugar, One egg, dash of vanilla. Mix all together well. I have made these cookies dozens of times and never had a problem. Try again, I guarantee you will love them.
